Keto Chocolate Muffins

I had a craving tonight for chocolate cake and went looking for an alternative.  I found a recipe for Keto Chocolate Muffins that looked easy and quick to make on the My Keto Kitchen website.

The recipe calls for almond flour, cocoa, erythritol, heavy cream, butter, vanilla, eggs, baking powder and sugar free chocolate chips.  All things any regular keto cook would have on hand.

I ate one hot out of the oven and it was fantastic.  It had just the right amount of sweetness and you’d never know they were keto friendly.

I didn’t have muffin cups so I just sprayed the muffin pan.  The  muffins came out easily with a fork although some of the edges crumbled off. One did fall apart completely so I ate that one too. Then I looked at the nutritional info and almost fainted.  At 300 calories and 26 grams of fat per muffin these puppies qualify as a small meal!

Muffin cups would have been a plus to help keep them together and to make them a little prettier.  However, these were fast and hit the spot.  I  would definitely make these again the next time a craving for chocolate cake comes along.
