Chocolate Chip Cookie Bake-Off!

Yesterday I received my first bag of Lilly’s Dark Chocolate Chips, via Amazon so I had to make something with them ASAP!  I decided to test drive three different recipes from three different websites.  My three contenders were Keto Connect’s Chewy Chocolate Chip Cookies, Coconut Flour Chocolate Chip Cookies from Ditch the Carbs, and Chewy Keto Chocolate Chip Cookies from The Castaway Kitchen.  I made all three batches this morning and use up the whole bag of  chocolate chips!

The recipes from Keto Connect and The Castaway Kitchen were the most similar. They both used almond flour and gelatin in their recipes.

Castaway’s recipe differed in that it called for 1/3 cup of some form of milk.  I used almond milk in mine.  The batter did seem “wetter” when forming the cookies on the tray and right upon coming out of the oven.  They did firm up well though and were quite good.

The cookies from Keto Connect spread out the most on the baking sheet when cooking.  The recipe calls for 1/2 cup of butter  which probably accounts for the spread.  These baked up nice and chewy.

The cookies from Ditch the Carbs used coconut flour, rather than almond flour. It also used the least sweetener.  I was very interested to see how this might affect the flavour.  The recipe also called for cacao nibs rather than chocolate chips.  I find cacao nibs really bitter so I used chocolate chips instead to level the playing field.  I forgot to flatten them before they went into the oven so I got cookie balls when they were cooked.  The cookies were quite dry and not sweet at all.  If I made these again, I would add more sweetener, but not much, maybe one extra tablespoon.

All the cookies baked up very nicely.  They were all somewhat crumbly coming out of the oven.  You do need to leave them to sit until cool.  Once cooled they all held together well.

So if I had to choose…

 

If I had a problem with nuts, I’d go with Ditch the Carbs version but I did find them a bit too dry.

If I wanted a reduced fat cookie, I’d go with The Castaway Kitchen’s which only had 3tbsp in the whole recipe.

And if I wanted a good old fashioned sweet, chewy cookie, I’d go with Keto Connect’s version. This one was my favourite!
